In My Heart, I'm Cajun {Giveaway}

On our long, long trip home two weeks (from this trip) ago, we found ourselves speeding down a highway in the middle of swamps. I am not kidding. 

It's called Louisiana.

My hubby decided we needed to learn more about this unknown-to-us land, only four hours from home, so he stopped at a fancy rest stop, complete with an Education Center. [Okay, it was really a complete accident we stopped there, or I should say we were trying to avoid an accident and took the first immediate exit.  Because. Y'all. This bladder ain't what it used to be and I was doing a serious dance in the front seat. I even begged a little).

So, we potty'ed and took a quick tour--complete with a talking bird and turtle--it was like Disney all over again (I am not making fun of you, Louisiana, don't be sensitive). It was really cool.

Anyway.

We hopped back in our car and do you know what The Hubby and I wanted in SOME KIND OF BAD WAY?

Cajun Food.

Because we may not be experts on Louisiana, but we know good food.

So. We stopped at Popeye's. (Again, not joking, we'd been in the car eleven billion hours and I wasn't about to do a sit-down dinner).  But this wasn't any Popeye's this one had a mighty strong Cajun flavor.

I have four words for you: Red. Beans. And. Rice.

And these weren't your everyday red beans and rice. They had been Cajun-a-fied, I'm sure of it.

The day after we unpacked and I refilled our fridge, I pulled out this puppy:

What is that fine appliance, you ask?  It's a Cuisinart Rice Cooker PLUS. It's a mean, rice-cooking machine. It's my first one in my 15 year marriage. I'm finally a grown-up cook!

The fine people of Cuisinart sent one to me to try out (for free!) And we had rice three nights in a row, cooked differently. Plus, it's a slow cooker and you can brown meat in it! I've made soup too. As a matter of fact, I pretty much don't need any other countertop appliances...good thing since my toddler knocked my slow cooker off the counter and dented is severely.

But, it also made this:
Cajun Red Beans and Rice.

Here's the recipe (that came with the appliance):

Makes 4 cups

4 ounces smoked chicken or turkey andouille sausage* 

cooking spray

1 can (15-ounce) red beans, rinsed and drained

1 teaspoon good quality olive oil

3 tablespoons finely chopped onion

2 tablespoons finely chopped celery

3 tablespoons finely chopped green bell pepper

1 clove garlic, finely chopped

1 cup (Rice Cooker) long grain rice

••• teaspoon thyme

1 bay leaf

1••• cups (standard liquid measure) chicken stock

3 tablespoons chopped Italian parsley 

Tabasco® or other hot sauce

Divide the sausage in half. Finely chop half the sausage; cut the remaining sausage into •••-inch pieces. Lightly coat the interior of the steaming tray with cooking spray. Place the red beans and sliced sausage into the steaming tray; reserve.

Insert the cooking bowl into the Cuisinart® Rice Cooker/Steamer. Place the olive oil in the bowl, cover, and turn on for 1 minute. Add the onion, celery, bell pepper, and garlic; stir to coat with oil. Cover and cook 3 to 4 minutes. Stir in the rice and thyme. Stir until rice is opaque, 3 to 4 minutes. Tuck in the bay leaf and add the chicken stock. Place the filled steaming tray on the bowl; cover. Turn the Rice Cooker on and cook until it switches to Warm, about 18 minutes. Let stand at Warm for 5 minutes. Transfer beans and sausage to a medium bowl; add cooked rice mixture to the same bowl. Remove and discard bay leaf. Gently toss rice mixture with beans and sausage. Add parsley and toss to combine. Transfer to a warmed bowl to serve. Serve with hot sauce if desired.

*Smoked chicken or turkey andouille sausage has much less fat than traditional pork andouille. It can be found in many well-stocked grocery stores. Smoked turkey kielbasa can be substituted.

OK, just let me say first off, that those red beans and rice look soooo yummy! :0) So I would definitely cook them, but I think I would make sticky rice in it first just to test it out.

Oooh, I'd get really creative and make brown rice. :) I like the "real" rice that is good for you, but it can be messy cooking it over the stove. This would be a great gift to me!!

Oh my, rice making heaven! I want one and the first thing I would make in it is jambalaya, which is a lot like your red beans and rice but no beans and a few more meats (shrimp, sausage, chicken, and spices galore!)After that would be wild rice pilaf, you know, the kind with white rice and the black wild rice grains? Mmmm! All my kids love that.

I would make steamed white rice because every. single. time. I try to make it in a saucepan with water, I scorch it! DH doesn't like instant rice so this would be a nice addition to our kitchen.

I have never owned a rice cooker but it sounds amazing! I would start with a basic white rice but then try any number of recipes. I didn't know a rice cooker could be so versatile.

I'm not really sure what I'd make first...I've wanted one of these for soo long. I love, love, love rice. I'd like to make Spanish rice, but I'd be the only one to eat it so I"d probably make fried brown ice first, so everyone could try it out.

A friend IRL recently posted about her Cuisinart Rice Cooker Plus, and I was sold then...but then we went on a no-spend November and now I'm boycotting Christmas gifts (well, the expensive ones) so I can't really ask for this, can I?

But I'd make soup and of course the beans and rice...On piano lesson day, when I can set the timer and let it work its magic while I'm on a 80-mile commute.

Rice Pudding! :)

2 cups rice (cooled)
2 eggs
1/2 cup Sugar
1 dash Nutmeg
2 1/4 cups milk
1 tsp vanila

Cooking Instructions
Separate egg yolk and whites
beat egg yolk, add milk, sugar, vanilla, and rice
beat egg whites until stiff and add last
Butter pyrex baking dish and add mixture
Bake in oven at 350 degrees F for 45 minutes
sprinkle with nutmeg out of oven

Something with brown rice - my rice cooker seems to not be working with brown rice.

So either lentil and brown rice taco filling or mexican brown rice.

Either way it would be delicious.

I would definitely try to replicate my mother's (and grandmother's) Swedish Rice Pudding! Warm, creamy, with nutmeg and cinnamon...can't be beat on a cold day!

So you finally discovered what we have known all along... Louisiana has some good food. Thats the only bad thing about vacations... the food is NEVER as good as it is at home....

I would like the Cuisinart and in exchange I will tell you my secret to real Louisiana Red Beans and Rice. Buy Tony's Red Beans and rice seasoning mix, put it in dried red beans in a big pot on stove, add sausage and let it cook for 4 hours or so on low to med heat. Pour it over rice.

Considering I live in & am from SE La (Northshore) & my husband is Japenese we eat a TON of rice. I buy it in 20lbs sacks at Sams. (No joke..just freeze it) So I would make jambalaya, white rice for gumbo, & fried rice. And those are just our top 3. BTW...thank you Jesus that there are 2 yes 2 Popeyes in my town....but Copelands is a good choice also.

I have a recipe that takes a box of Zatarains black beans and rice, water, a can of Rotel Tomatoes, cup of frozen corn, can of green chilies and a lb of ground beef/turkey (sprinkled with cilantro when done)...I think this would be a cinch in the rice cooker PLUS.

Then...om to Basmatti rice for some Indian Food!

Oooh, I've wanted a rice cooker since we were in Japan. They love their rice there. We love rice especially Japanese rice. Trying to get them to eat healthier with brown rice, so that is definitely what I would attempt to fix more of. :D Thank you for the great giveaway!

Oh, my goodness! What an amazing piece of machinery! I LOVE IT!!! Maybe it would get us away from the Uncle Ben's microwave in a bag -- done in 5 minutes Rice! Hee Hee! I love the fact that you can brown meat in it! I would need to branch out and try some new recipes -- b/c being from the Midwest....ummm....we really like Meat & Potatoes! So, cookbook, here I come! I would make some white rice like my sister-in-law makes when I visit her in NH. I mix it with butter and pepper and it is delightful. She says it is all in the rice cooker which by the way is the same one that you have!!!

I have actually had a serious craving for a spicy rice/sausage dish of some kind so I'd prolly borrow your recipe and make that :) although I'm sure the boys would like it if I made them their favorite "white rice and peas"

I do love me some red beans and rice. I believe I would first try some rice pudding. As a child, I went on Sundays to a favorite Greek restaraunt that served the best rice pudding. Still trying to duplicate it.

I have a skillet meal with black beans and rice, hamburger meat, corn and Rotel that I cook. It's very yummy. And we eat rice with meals all the time! This would make my mealtime much easier.

The first thing I'd make is Christmas Candy. :) I have two different ones for teachers this year: Chocolate Peanut Clusters and White Chocolate Peppermint Pretzels. YUUUMMMYYY! But, I'd also do soups and Jambalaya too, of course.
