Pumpkins



We've been having pumpkin fun all month! And later today, we're heading out to our church's annual fall festival. I love October.



1 cup vegetable oil
4 eggs, beaten
2/3 cup water
2 cups canned pumpkin
3 1/3 cups sifted all-purpose flour 
1 1/2 teaspoons salt
1/2 teaspoon nutmeg
2 teaspoons baking soda
1 teaspoon cinnamon
2 1/2 cups granulated sugar


Preheat oven to 350.. Grease and flour four (1-pound) coffee cans 

In a mixing bowl, combine oil, eggs, water and pumpkin.

In another bowl, sift together flour, salt, nutmeg, baking soda, cinnamon and sugar.  Blend together until dry ingredients are moist. Bake 1 hour and 20 minutes. We leave them in the cans and cover them with the lids after they've cooled.

Join in Bake at 350's pumpkin-flavored party the last day of October!

That sounds yummy! I was debating whether or not to go to the pumpkin patch this year, and your recipe decided for me :) Plus, I just happen to have 4 1-pound coffee cans from a Boston brown bread experiment (yuck).

What cute little punkins! The gourds are cute, too ;).
The bread sounds delish, but is there another way to bake it. No coffee drinkers here.
October is THE best month of the year.

We are that family...so nice to have found your website. I just finished baking your pumpkin bread recipe and it's delicious. The kids are drooling over it. My dear husband requested pumpkin bread some time soon when he saw luscious pumpkin muffins at Whole Foods Market this afternoon. They wanted $2.50 per muffin. We are not that family willing to spend that much on a single muffins with a family of six. I went home and made two (2lb.) breads for peanuts. Thanks for the encouragement.

We love to make pumpkin smoothies on the first day of fall every year--sooooo yummy!!

Oh, and I just recently made stew in a pumpkin--that was festive and fun!!

Home made pumpkin pancakes are a hit here, too!!

I think my kids are going to turn orange.

I was having trouble with my computer, but I've finally got the link for the Pumpkin Whoopie Pies recipe. For you Mindy. ;)

I used this recipe and doubled it. I made some mini and some larger pies. They were a hit at our church tonight.

That is the coolest thing! I've never heard of baking bread in a coffee can before. How convenient to be able to just put the lid on when it cools. I think I'll have to try this!

I love the recipe! I'm going to try it for sure. I also have a wonderful recipe I learned but...ssshhhhh!...it's half the fat and calories of a regular cake! Buy any store-bought spice cake mix. Stir in a 15-ounce-can of pure pumpkin. Bake according to box. The end. No eggs, oil, etc. Just the box mix and pumpkin. I call it pumpkin bread, then I don't have to put icing on it! It tastes great, the kids love it and no one knows it's healthier! Great with coffee too! :)

Sounds yummy and how totally neat to bake in coffee cans...that is so old timey and I love it! I have never ever heard of baking in coffee cans! Yeah to your grandmother!
