For someone who doesn't possess the joy of cooking, I sure have been talking a lot about it this week!
It's necessary though, since the people who live with me hold up empty plates and give me puppy dog eyes.
I love the idea of not heating up the kitchen in the hot summer months! You can read some cool kitchen ideas (and enter to win free chicken and cookbooks from yesterday's post) here. I'm a big salad person. Actually, my hubby is too and my kids will eat anything with Ranch dressing on it.
Here's my favorite summer salad:
Summer Strawberry Salad
Roman lettuce, chopped
A pint of fresh sliced strawberries
Crumbled feta cheese-3 tablespoons
Chopped pecans-1/4 Cup
Raspberry Walnut Vinaigrette
I add grilled chicken on top if it's our main course!
My mother-in-law makes an unbelievable Boston Cream Pie. It's divine, easy and it's adding a thickness to my hips since we just polished one off today!
Boston Cream Pie
1 round yellow cake layer (8 or 9 inches) Cut into 2 layers
1 Cup cold milk
1 pkg Jello-Vanilla Instant Pudding, Pie filling
1 1/2 Cups Cool Whip (thawed)
Beat together (milk, pudding, Cool Whip) and spread on layer. Top with second cake layer.
Microwave on high 1 square Baker's Unsweetened Baking Chocolate and 1 Tablespoon butter.
Add 3/4 Cup Powdered Sugar and 2 Tablespoons cold milk.
Spread chocolate mixture over top layer and refrigerate.
You'll be glad you did (except for the hip-thickening part).

MMMMMMMmmmm on both your recipes :). My husband is a huge fan of Boston Cream Pie but I don't think I've ever actually made it.
A nice addition to my recipe for Vidalia Onion Pie (it's yummy enough for dessert, I tell ya!) is the Vidalia Onion "people" offered to host a giveaway! One lucky commenter will win a Vidalia Onion goodie basket valued at $40. Now, THAT should work for somebody!! :)

Wow. Both sound absolutely yummy. I also like how uncomplicated the recipes are.
Everyone's recipes sound delicious. I am sad to miss the second themed carnival in a row. Somehow I failed to notice that tomorrow was the first of the month. Next month I will be ready with an organizational tip!

Your recipes look divine. Can't wait to try the salad. Hey, try French vanilla pudding in place of the plain vanilla to make that cake taste even richer!
Just made your delicious cake for a birthday for 2 of my kids..yes 2 out of 3-same date!7/11 they like different kinds of cake and the Friendly's Watamelon Roll! It becomes a whole weekend of party no matter how old they get!Thanks for the idea!
